First, combine all ingredients such as taco seasoning, olive oil, lime juice, salt, and pepper in a bowl and whisk well.
When the spices are whisked well, add the chicken thighs and mix well. Make sure all the thighs are nicely coated, otherwise toss them again.
Now it's time to marinate. At least 10 minutes is essential, if possible refrigerate for up to 24 hours to marinate.
Now it's up to you what you want to use, if you have a grill pan that's best, otherwise a simple skillet will do. Heat the grill pan well.
Drizzle a little olive oil on top. Arrange the chicken thighs on the pan.
At least 4-5 minutes are needed for each side to cook properly, if needed it may take a little longer.
Then take the chicken thighs off the grill pan and after they cool, cut them into pieces with the help of a knife. Cut to your preferred size, but I prefer to cut into bite-sized pieces.
For the Taco
First, place 1 tbsp of lettuce on the bottom of each tortilla.
Now divide the chicken pieces evenly among all the tortillas.
Then spread that specially made salsa (tomato, onion, jalapeño, and cilantro).
