Ingredients
- 1 tbsp Olive oil (or sub veg broth/water for zero-oil option)
- 1 medium Yellow onion, finely diced
- 3 large Carrots, diced
- 3 stalks Celery, diced
- 3 cloves Garlic, minced
- 1 cup Brown or green lentils, rinsed and picked over
- 1 can (14.5 oz) Diced tomatoes (no salt added)
- 6 cups Low-sodium vegetable broth
- 1 tsp Dried oregano
- 1 tsp Dried thyme
- 1 tsp Ground cumin
- 1 Bay leaf
- 2 cups Fresh baby spinach or chopped kale
- 1 tbsp Fresh lemon juice (for finishing)
- Salt & black pepper to taste
Instructions
- Sauté the Aromatics:
Heat olive oil in a large Dutch oven or soup pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5–7 minutes until the vegetables begin to soften. Stir in the minced garlic and cook for another 1 minute until fragrant. - Add Spices & Base:
Stir in the oregano, thyme, cumin, salt, and pepper. Let the spices toast with the vegetables for 30 seconds. - Simmer the Soup:
Pour in the rinsed lentils, canned diced tomatoes (with juices), vegetable broth, and bay leaf. Stir well to combine. Bring the mixture to a boil over high heat, then reduce the heat to low, cover, and let simmer for 25–30 minutes, or until the lentils and carrots are tender. - Wilt Greens & Finish:
Remove the pot from the heat and discard the bay leaf. Stir in the fresh spinach or kale, allowing it to wilt in the heat for 2–3 minutes. Finish by stirring in the fresh lemon juice to brighten the flavors. - Serve:
Ladle into bowls and enjoy hot!
