This one pot shrimp fra diavolo is a quick and savory Italian-American classic. It features succulent, perfectly cooked shrimp tossed with al dente pasta in a spicy, garlicky, white wine tomato sauce—and since it's all cooked in one pot, there's minimal cleanup.
Instructions
- Sear the Shrimp: Heat 2 tbsp extra virgin olive oil in a large Dutch oven over medium-high heat. Season 1 lb peeled and deveined jumbo shrimp with salt and black pepper. Sear for 1–2 minutes per side until pink, then remove and set aside.
- Build the Sauce Base: In the same pot, add 1 tbsp olive oil, 4 cloves finely minced garlic, and 1/2 to 1 tsp red pepper flakes (adjust to heat preference). Sauté for 1 minute until fragrant.
- Deglaze & Simmer: Pour in 1/2 cup dry white wine (or chicken broth) and simmer for 2 minutes to reduce. Stir in one 28 oz can of crushed San Marzano tomatoes, 2 cups seafood or chicken stock, and 1 tsp dried oregano. Bring to a boil.
- Cook the Pasta: Add 8 oz spaghettini or linguine directly into the boiling sauce. Reduce heat to medium, stirring frequently to keep pasta from sticking, and simmer for 9–11 minutes until al dente.
- Combine & Serve: Stir the seared shrimp back into the pot for 1–2 minutes until heated through. Remove from heat, toss in 1/4 cup fresh chopped parsley and torn basil leaves, and serve warm.
