Pesarattu is a traditional, high-protein South Indian crepe (a type of pancake) made from whole green moong dal, aromatic ginger, green chilies, and cumin seeds. Unlike a regular rice-based dosa, pesarattu does not require any fermentation (or overnight soaking); this makes it a quick-to-prepare, nutritious, and delicious option for breakfast or dinner.

Total Time 4 hours 25 minutes

Ingredients

For the Batter:

  • Whole Green Gram (Sabut Moong): 1 cup
  • Rice or Rice Flour: 2 tbsp (adds crispness)
  • Fresh Ginger: 1 inch piece, peeled and chopped
  • Green Chilies: 2 to 3 (adjust to taste)
  • Cumin Seeds (Jeera): 1 tsp
  • Salt: 1 tsp (or to taste)
  • Water: 1/2 to 3/4 cup (for grinding)

For Topping & Cooking:

  • Finely Chopped Onion: 1/2 cup
  • Finely Chopped Fresh Coriander: 2 tbsp
  • Finely Chopped Ginger: 1 tsp (optional)
  • Oil or Ghee: For roasting

Instructions

1. Soaking & Prep

    1. Wash the whole green gram (sabut moong) and rice thoroughly under cold running water 2–3 times.
    2. Soak in sufficient water for 4 to 6 hours (or overnight).

2. Grinding the Batter

    1. Drain the soaked lentils and transfer them to a high-speed blender or mixer jar.
    2. Add the chopped ginger, green chilies, cumin seeds, salt, and about 1/2 cup of water.
    3. Grind to a smooth, pourable batter (similar to standard dosa batter consistency). Add a splash of water if it’s too thick.

3. Making the Pesarattu

    1. Heat a cast-iron skillet or non-stick tawa on medium-high heat. Test the heat by sprinkling a few drops of water—it should sizzle and evaporate instantly.
    2. Lower the heat slightly, pour a ladleful of batter onto the center of the tawa, and spread it quickly in a gentle circular motion from inside out to make a thin crepe.
    3. Immediately sprinkle a tablespoon of chopped onions, coriander, and optional chopped ginger over the surface. Gently press them into the batter with a spatula.
    4. Drizzle 1/2 to 1 tsp of oil or ghee around the edges and over the top.
    5. Cook on medium heat until the bottom turns golden brown and crispy (about 2 minutes).
    6. Fold and serve hot. (Note: Authentic Pesarattu is usually cooked on one side only, but you can flip it briefly if preferred).

Notes

  • Upma Pesarattu (MLA Pesarattu): Place a scoop of warm semolina Upma in the center of the dosa before folding for the iconic restaurant style.
  • Fermentation: No fermentation is needed, but if you let the batter rest for 15–20 minutes after grinding, the dosas turn out slightly softer inside while staying crisp outside.
  • Crispiness Hack: Adding 2 tablespoons of raw rice while soaking gives a lighter texture and better crunch.
