This awesome ‘Skillet Sausage and Zucchini Stir Fry’ has loaded with veggies and flavour that can be ready within 20 minutes. You can served this with steamed rice or pasta for dinner. Also, it’s a great summer dinner.

At first, complete the cutting process. So, slice the sausages into 1/3″ thick slices, and for zucchini, you can choose your favourite size.
Now heat a frying pan with 1 tbsp of olive oil over medium heat.
When the oil is hot, add sausages into the pan and cook for few minutes.
Flip the sausages occasionally and fry them until they become soft and little more brown.
Remove them from the pan and put them aside.
Heat the skillet again with 1 1/2 tbsp of oil on high heat.
When the oil is hot, reduce the heat to medium and add minced garlic.
Fry the garlic for few seconds and add cubed onion.
Saute them for 1-2 minutes and add chopped zucchini.
Fry them for few seconds then add red bell pepper.
Do not reduce the heat and continue to cooking.
Now add dried oregano along with salt and black pepper powder.
Toss them well.
Now add the sausages into the pan and toss them. You can also add some garlic powder at this time.
You can also add fresh basil leaves at this time and saute well.
Let them cook well, and bell peppers are tenderized.
Cover the pan and let it cooked for few more minutes on low heat.
Serve with your desired garnishing.

Ingredients
- 2 nos. Zucchini medium size (cubed)
- 4 nos. Sausage cut 1/4" thick circles
- 1 nos. Onion cubed
- 3 clove Garlic minced
- ½ tsp Oregano
- ½ tsp Dried Basil
- 1 nos. Bell Pepper cubed
- ¼ tsp Black Pepper powder
- 2½ tbsp Olive Oil
- ½ tsp Salt
Instructions
