Fig Ricotta Walnut Sandwich
Take your ordinary toast to the next level with this luxurious open-faced sandwich. Warm, crusty sourdough bread is slathered with creamy, lemon-flavored whipped ricotta, topped with fresh juicy figs, toasted walnuts, fresh thyme, and a drizzle of honey. It's light, flavorful, looks amazing, and ready in less than 10 minutes.
Ingredients
For the Base & Spread
- 2 slices Sourdough or Artisan Bread (thickly sliced)
- ½ cup Whole Milk Ricotta Cheese
- ½ tsp Fresh Lemon Zest
- 1 tsp Extra Virgin Olive Oil (plus extra for brushing bread)
- Pinch of Sea Salt & Freshly Cracked Black Pepper
For the Toppings
- 3–4 Fresh Figs (sliced into rounds or quarters)
- 2 tbsp Walnuts (roughly chopped and toasted)
- 1 tbsp Honey or Maple Syrup (for drizzling)
- 1 tsp Fresh Thyme Leaves (or fresh basil/mint)
- Flaky Sea Salt (for finishing)
Instructions
- Toast the Walnuts:
Heat a small dry skillet over medium heat. Add the chopped walnuts and toast for 2–3 minutes until fragrant and lightly browned. Remove immediately and set aside to cool. - Prepare the Bread:
Lightly brush both sides of your sourdough slices with a small touch of olive oil. Toast them in a skillet, toaster, or oven until golden brown and crispy around the edges. - Whip the Ricotta:
In a small bowl, combine the ricotta cheese, lemon zest, 1 teaspoon olive oil, a pinch of sea salt, and fresh black pepper. Stir vigorously with a spoon or small whisk for about 30 seconds until smooth and creamy. - Assemble the Open Sandwich:
Generously spread the whipped ricotta mixture evenly over the toasted bread slices. - Layer the Toppings:
Arrange the fresh fig slices over the layer of ricotta. Scatter the toasted walnuts on top. - Garnish & Serve:
Drizzle honey evenly over the sandwiches. Garnish with fresh thyme leaves and a tiny sprinkle of flaky sea salt. Serve warm or at room temperature immediately.
Notes
- Fig Availability: Out of fresh fig season? You can substitute fresh figs with a quality fig jam/preserve or dried figs rehydrated in warm water.
- Ricotta Texture: For an extra-velvety texture, blend the ricotta in a small food processor or bullet blender for 15 seconds before assembling.
- Bread Choice: Sturdy, crusty bread like Sourdough, Ciabatta, or French Boule works best so it doesn't get soggy under the whipped ricotta.
