Ingredients

For the Egg Base:

  • 8 large eggs
  • 1/4 cup whole milk (or heavy cream)
  • 1/2 tsp salt
  • 1/4 tsp freshly cracked black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried Italian seasoning

For the Filling:

  • 1 tbsp olive oil or butter
  • 1/2 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 3 cups fresh baby spinach, chopped
  • 1.5 cups cooked chicken, shredded or diced
  • 1 cup shredded mozzarella or shredded cheddar cheese (divided)
  • 2 tbsp grated Parmesan cheese

Instructions

  1. Prep the Oven & Pan:
Preheat your oven to 350°F (175°C). Lightly grease a 9-inch oven-safe skillet (cast iron works great) or a 9-inch pie dish with cooking spray or butter.
  2. Sauté the Vegetables:
Heat the olive oil in a skillet over medium heat. Add the diced onion and cook for 3–4 minutes until soft and translucent. Add the minced garlic and cook for 1 minute until fragrant. Add the fresh spinach and cook just until wilted (about 1–2 minutes). Remove from heat.
  3. Whisk the Egg Mixture:
In a large bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and Italian seasoning until fully blended and light.
  4. Assemble the Frittata:
Spread the cooked chicken, sautéed spinach-onion mixture, and 1/2 cup of shredded mozzarella evenly along the bottom of the greased baking dish or skillet. Pour the egg mixture over the ingredients, ensuring everything is evenly distributed.
  5. Top & Bake:
Sprinkle the remaining 1/2 cup of mozzarella and the grated Parmesan cheese evenly over the top. Bake for 20 to 25 minutes, or until the eggs are set in the center and the edges are lightly golden brown.
  6. Cool & Serve:
Remove from the oven and let it cool for 5 minutes before slicing into wedges. Garnish with fresh herbs if desired and serve warm.

Notes

  • Chicken Options: Rotisserie chicken, grilled chicken breast, or baked chicken thighs work perfectly.
  • Dairy-Free Option: Substitute the milk with unsweetened almond or oat milk and omit or swap the cheese for a dairy-free alternative.
  • Storage & Meal Prep: Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat individual slices in the microwave for 45–60 seconds.
  • Add More Veggies: Feel free to add diced bell peppers, cherry tomatoes, or mushrooms along with the spinach for extra color and flavor.
