Easy Bruschetta-ish Cottage Cheese Toast | High-Protein Snack
Bruschetta-style Cottage Cheese Toast
A vibrant and protein-rich blend of classic Italian bruschetta and creamy whipped cottage cheese. Crusty, warm garlic-rubbed toast is topped with velvety cottage cheese and a sweet, herbaceous balsamic tomato topping.
Ingredients
For the Tomato Topping:
- 1 cup cherry or grape tomatoes, quartered (or finely diced Roma tomatoes)
- 1 tbsp extra virgin olive oil
- 1 tbsp fresh basil, chiffonade (finely sliced)
- 1 small garlic clove, grated or finely minced
- 1 tsp balsamic glaze (plus extra for drizzling)
- Pinch of coarse salt and freshly cracked black pepper
For the Toast & Base:
- 1 cup full-fat or 2% cottage cheese
- 2 thick slices sourdough or crusty artisanal bread
- 1 peeled garlic clove (whole, for rubbing the toast)
- Optional Garnishes:
- Flaky sea salt (e.g., Maldon)
- Red pepper flakes (for a touch of heat)
Instructions
- Prep the Tomato Mixture:
In a small bowl, gently combine the quartered tomatoes, extra virgin olive oil, fresh basil, minced garlic, balsamic glaze, salt, and black pepper. Toss well and let sit at room temperature for 5 minutes so the flavors meld together. - Whip the Cottage Cheese:
Add the cottage cheese to a high-speed blender or small food processor. Blend for 30–60 seconds until completely smooth and velvety. (Note: You can skip blending if you prefer the traditional texture, but whipping gives it an ultra-creamy, spreadable finish!) - Toast & Garlic the Bread:
Toast your sourdough slices until deep golden brown and sturdy. Immediately after taking them out of the toaster, rub one side of each warm slice with the whole peeled garlic clove. The rough surface of the hot toast acts like a grater, infusing rich garlic flavor directly into the bread. - Assemble the Toast:
Generously spread half of the whipped cottage cheese onto each garlic-rubbed toast slice. Top each slice with a generous spoonful of the marinating bruschetta tomatoes. - Garnish & Serve:
Drizzle with additional balsamic glaze, a sprinkle of flaky sea salt, and extra fresh basil leaves. Serve immediately while the toast is warm and crispy!
Notes
- Bread Matters: Choose a sturdy, thick-cut sourdough or rustic Italian bread. Thinner or softer breads will get soggy quickly under the juicy tomato topping.
- Make-Ahead Tip: You can whip the cottage cheese up to 3 days in advance and store it in an airtight container in the fridge. Prepare the tomato topping up to 2 hours before serving for peak freshness.
- Low-Carb Option: Swap the sourdough for thick-cut grilled zucchini slabs or grain-free seed bread.
- Protein Boost: For even more protein, add a poached egg or a thin slice of prosciutto on top.
