  • Zucchini: 1 large, sliced into half-moons
  • Chickpeas (Garbanzo Beans): 1 can (15 oz / 400g), drained and rinsed
  • Diced Tomatoes: 1 can (14.5 oz / 400g) with juices (preferably fire-roasted)
  • Vegetable Broth: 1.5 cups (360 ml), low sodium
  • Tomato Paste: 1 tbsp

Spices & Seasoning:

  • Dried Oregano: 1 tsp
  • Ground Cumin: 1 tsp
  • Smoked Paprika: 1/2 tsp
  • Red Pepper Flakes: 1/4 tsp (optional, for gentle heat)
  • Salt & Black Pepper: To taste

Finishes & Garnish:

  • Fresh Lemon Juice: 1–2 tbsp (about half a lemon)
  • Fresh Parsley or Basil: 1/4 cup, finely chopped
  • (Optional) Kalamata Olives: 1/3 cup, pitted and halved
  • (Optional) Vegan or regular Feta Cheese: For crumbling on top before serving

Instructions

  1. Sauté the Aromatics:Heat the olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cooked for 4–5 minutes until soft and translucent. Stir in the minced garlic and tomato paste; cook for 1 minute until fragrant.
  2. Sauté the Vegetables:Add the bell peppers and zucchini to the pot. Cook for 3–4 minutes, stirring occasionally, until they begin to soften slightly.
  3. Bloom the Spices:Sprinkle in the dried oregano, cumin, smoked paprika, red pepper flakes, salt, and black pepper. Stir well for about 30 seconds to coat the vegetables and toast the spices.
  4. Simmer:Pour in the diced tomatoes (with their juices), drained chickpeas, and vegetable broth. Stir everything together and bring to a gentle boil. Reduce heat to low, cover the pot with a lid, and simmer for 12–15 minutes, or until the vegetables are tender.
  5. Finish and Season:Remove from heat. Stir in the fresh lemon juice, chopped herbs, and optional Kalamata olives. Taste and adjust salt or lemon juice as needed.
  6. Serve:Ladle into bowls and garnish with extra fresh parsley and crumbled feta if desired. Serve hot alongside crusty bread or grains.
