Ingredients

Base Mixture

  • 1 cup rolled oats (certified gluten-free if needed)
  • 1 cup canned light coconut milk (or coconut milk drink)
  • ½ cup plain or vanilla Greek yogurt (or coconut yogurt for vegan option)
  • 1 tbsp chia seeds
  • 1 ½–2 tbsp maple syrup or honey (adjust to taste)
  • Zest of 1 fresh lime (approx. 1 tsp)
  • 1 tbsp fresh lime juice
  • ¼ tsp pure vanilla extract
  • Pinch of fine sea salt

Optional Toppings

  • 2 tbsp toasted unsweetened shredded coconut or coconut chips
  • Fresh lime slices for garnish
  • Fresh mango, pineapple, or kiwi chunks

Instructions

  1. Mix Liquids & Aromatics: In a medium bowl or liquid measuring cup, whisk together the coconut milk, Greek yogurt, maple syrup, lime zest, lime juice, vanilla extract, and sea salt until smooth and combined.
  2. Add Dry Ingredients: Add the rolled oats and chia seeds. Stir thoroughly to ensure all oats are submerged and the chia seeds are evenly distributed.
  3. Jar & Chill: Divide the mixture evenly between two 8-oz glass jars or airtight containers. Seal with lids and place in the refrigerator for at least 4 hours, preferably overnight.
  4. Garnish & Serve: Before serving, give the oats a quick stir. Top with toasted shredded coconut, fresh fruit, and an extra pinch of lime zest if desired. Enjoy cold!

Notes

  • Meal Prep: Keeps well in the refrigerator for up to 4–5 days.
  • Pro Tip: Toast the shredded coconut in a dry skillet over medium-low heat for 2–3 minutes until light golden for maximum flavor and crunch.
