Roast your tomatoes and garlic seasoned with salt, pepper, and olive oil. Meanwhile, caramelize the onions in a large pan of olive oil. When everything’s done, let the tomatoes cool down for some minutes and add them to a blender jar with the caramelized onions and basil and blend them all together. Then place a pan over medium heat and empty the jar into the pan. Add in vegetable broth, oregano, salt, and pepper, and let it simmer for a couple of minutes. You can also add in cream or coconut milk for that extra creaminess. Garnish with some parmesan and fresh basil on top and serve it hot.

This recipe calls for the following ingredients – green chilies, garlic pod, roasted cumin powder, salt, and finely chopped coriander. Place a wire rack over medium flame and roast the tomatoes on all sides until the skin is burnt and the tomatoes turn soft from the inside. In the same way, roast the green chilies and garlic pods. Let everything cool down and peel off the skin of the tomatoes and the garlic. Mash everything well into a smooth texture. Now add in the roasted cumin, salt, and coriander and mix well. These marinated tomato recipes are healthy recipes with a 10-minute meal prep. You literally toss everything in and it’s done!

You can use cherry tomatoes in this recipe. Cut them into halves. If using Italian tomatoes like I did, cut them into 1/3 “ slices. On a large plate, put the tomato slices. Keep that aside. We’re going to make a flavor punch marinade. In a bowl, add olive oil, red wine vinegar, lemon juice, finely diced onion, minced garlic, finely chopped basil and parsley, sea salt, and freshly cracked pepper to taste. Whisk it well and the marinade is ready. Now drizzle this marinade all over the plate of tomatoes and coat the tomatoes well in the marinade. Cover and rest the tomatoes for 2 hours. Occasionally flip the tomatoes. You can also refrigerate it. Serve with roasted chicken breast or your favorite meat and gobble up!

Take another small bowl and add the parmesan cheese and toasted breadcrumbs. Distribute the mixture evenly to cover the top of the tomatoes. Bake for 30-35 minutes.
