Easy Pecan Pie Keto Overnight Oats Recipe (Low Carb, Sugar-Free)
Pecan Pie Keto Overnight Oats
Enjoy all the warm, buttery, brown-sugar flavor of classic pecan pie in a healthy, low-carb breakfast! Traditional oats are replaced with a blend of hemp hearts, chia seeds, and ground flax to create a thick, creamy "oatmeal" texture without the carb overload. Perfect for busy weekday mornings!
Ingredients
For the "Oats" Base:
- 3 tbsp Hemp heart seeds
- 1 tbsp Chia seeds
- 1 tbsp Golden flaxseed meal
- 1 tbsp Lakanto Golden (or any granular keto brown sugar replacement)
- ½ tsp Ground cinnamon
- 1 pinch Sea salt
- ½ cup Unsweetened almond milk (or coconut milk)
- 1 tbsp Heavy whipping cream (optional, for extra richness)
- ¼ tsp Pure vanilla extract
For the Pecan Pie Topping:
- 2 tbsp Pecans, chopped
- 1 tsp Butter, melted (or coconut oil)
- 1 tsp Sugar-free maple syrup
- 1 pinch Sea salt
Instructions
- Mix the Base: In a small jar or airtight container, combine the hemp hearts, chia seeds, flaxseed meal, keto brown sweetener, cinnamon, and sea salt. Stir well to distribute the dry ingredients evenly.
- Add Liquids: Pour in the unsweetened almond milk, heavy cream, and vanilla extract. Stir thoroughly until no clumped seeds remain.
- Chill: Seal the jar with a lid and place it in the refrigerator for at least 4 hours (preferably overnight) to allow the chia and flax to gel and create a creamy oatmeal texture.
- Prepare Pecan Topping: Before serving, toss the chopped pecans with melted butter, sugar-free maple syrup, and a pinch of sea salt in a small bowl.
- Assemble & Serve: Stir the chilled "oats" once more, top with the sweetened pecan mixture, and enjoy cold (or microwave for 30–45 seconds if you prefer a warm breakfast)!
Notes
- Warm It Up: If you dislike cold oats, warm the jar in the microwave (without the metal lid) for 30–45 seconds before adding the toasted pecan topping.
- Boost the Protein: Stir in 1 scoop of unflavored or vanilla collagen peptides / whey protein powder before chilling (add 2 additional tablespoons of almond milk if using protein powder).
